COURSE OVERVIEW:
This course is designed to equip individuals with the skills and knowledge necessary to prepare nutritious and personalised meals for clients in Residential & Home Care Settings. This course is essential for professionals working in community care, aged care, disability support, and other related sectors, where meal preparation plays a vital role in supporting clients' health and well-being.
In Section A, participants will explore various aspects essential for meal preparation in Residential & Home Care Settings. This includes understanding dysphagia and its implications for meal planning and preparation, common food requirements, nutrition principles, and individual needs and preferences relevant to meal planning. Participants will also learn approaches to engaging and supporting clients in meal preparation, organisational policies and procedures, industry context, individualised plan content, industry standards and frameworks, meal preparation risk identification, and safe use of cooking equipment and utensils. Additionally, the course will cover methods for estimating, calculating, and measuring ingredients, keeping the cooking area clean and tidy, and basic food preparation and cooking methods.
In Section B, participants will develop practical skills for meal preparation by reading individualised plans to confirm client needs and preferences, suggesting, sourcing, and adjusting recipes to meet individual requirements, and recognising and adjusting food and fluid modifications as per the individualised plan and relevant industry standards. Participants will also learn to purchase required ingredients within budget constraints, provide opportunities for client engagement, prepare cooking areas and participants for safe meal preparation, measure and prepare ingredients, cook according to recipe requirements, and present meals according to individual needs and preferences. Moreover, participants will learn about personal hygiene, infection control, health conditions impacting food preparation, reporting hygiene and food hazards, maintaining hygienic food preparation areas, and handling food safely.
In addition, participants will gain practical experience in planning and preparing meals and snacks that meet the needs and preferences of clients while providing opportunities for client involvement. This approach will ensure that participants are capable of delivering personalised and nutritious meals in Residential & Home Care Settings.
By the end of this course, participants will be equipped with the skills, knowledge, and confidence necessary to plan, prepare, and present meals that support the health, well-being, and preferences of clients in Residential & Home Care Settings, thereby enhancing their quality of life and fostering independence and dignity.

Section B: Performance Tasks
· Read individualised plan to confirm needs and preferences relevant to meal preparation.
· Suggest, source and adjust simple recipes to meet individual needs and preferences.
· Recognise requirements for food and fluid modification according to individualised plan and relevant industry standards and frameworks and adjust recipes accordingly.
· Review recipe and determine ingredient types and amounts.
· Check ingredient stock level and quality to identify type and amount of ingredients to be purchased.
· Purchase required ingredients within budget constraints.
· Provide opportunities for the person to engage throughout the meal preparation process.
· Prepare cooking area and those engaging in meal preparation for safe meal preparation.
· Measure and prepare ingredients according to recipe requirements.
· Cook ingredients according to recipe requirements.
· Present prepared meal according to individual needs and preferences.
· Clean and tidy cooking area, utensils and equipment.
· Ensure personal hygiene and protective equipment meet infection control requirements and work health and safety standards.
· Report personal health conditions that impact on food preparation and take action according to organisational policies and procedures.
· Recognise and report hygiene and food hazards that may negatively affect health and safety of self or others, according to organisational policies and procedures.
· Maintain the food preparation area in a hygienic condition and report cleaning, sanitising and maintenance requirements according to organisational policies and procedures.
· Maintain hygienic storage and select environmental conditions that avoid contamination of food.
· Handle food hygienically and in accordance with organisational and regulated food safety procedures.
· Plan and prepare two meals and two snacks that:
o meet the needs and preferences of the client
o provide opportunities for client involvement.
