INTRODUCTION:

Welcome to the Safely Transport & Store Prepared Food course. This course only includes a challenge assessment designed to assess your knowledge and skills required to demonstrate competence in selecting suitable transport methods and storage conditions for prepared food, applying safe loading, unloading and manual handling practices, and maintaining food safety, hygiene, temperature control and documentation requirements during food transportation and storage activities.

Safely transporting and storing prepared food involves controlling the conditions that affect food quality, freshness, appearance and safety while food is moved between locations or held for later use. This work requires workers to select appropriate vehicles and transport methods, package and restrain food correctly, use hygienic handling practices, and apply storage and holding methods that protect food from contamination, pest activity and temperature abuse. This work is important because poor transport or storage practices can quickly compromise food safety, lead to microbiological contamination, reduce product quality and create serious risks under food safety laws, standards and workplace food safety procedures.

The course assessment focuses on your ability to apply the requirements that govern safe food transportation and storage, including vehicle selection, packaging, loading and unloading practices, manual handling techniques and recordkeeping. You will be required to demonstrate how you choose suitable storage conditions for different food types, control environmental conditions that affect freshness and quality, and apply hygienic food safety practices that protect prepared food during movement, holding and storage.

By successfully completing this course assessment, you will have demonstrated that you can select appropriate vehicles, transport methods and storage conditions for prepared food, package and restrain food safely for transport, apply hygienic loading, unloading and manual handling practices, maintain temperature and environmental controls that protect food quality and safety, meet recordkeeping and legal food safety requirements, and manage contamination, pest and microbiological risks during transportation and storage of prepared food.
